Toujis Spiced Red Beans & Rice Healthy Burrito with Collard Greens and AvocadoNothing’s as hearty a comfort food as beans and rice. You can enjoy this mix as a bowl with fresh greens or as a healthy “burrito-style” wrap. Both the rice and bean mixture are thick enough that you won’t have to worry about a mess when eating. I used a collard green for my wrap, but feel free to use other large-leaf greens. Romaine Lettuce has a lighter flavor, while kale and collard greens have a much stronger green/earthy flavor….

Perfect Vegetarian Jumbalaya

Toujis Vegetarian Jumbalaya / Rich Minestrone SoupI love this. Rich, hearty, and it’s super easy to make with lots of different ingredients you may have on hand. I’ve made this jumbalaya many different ways — fresh green beans, parsnip, daikon radish, spinach, parsley, experiment with your veggies and find different combinations you love.  The below ingredient list is a great base and guaranteed to taste amazing. Also note that you can use canned beans for a quicker dish, but I prefer to use a mixture of dried beans, soaked overnight and cooked longer with the other ingredients. The longer process creates that more saturated, slightly spiced “jumbalaya” flavor….
