RECIPE

Spiced Red Bean & Rice Collard Green Wrap

Toujis Spiced Red Beans & Rice Healthy Burrito with Collard Greens and AvocadoNothing’s as hearty a comfort food as beans and rice. You can enjoy this mix as a bowl with fresh greens or as a healthy “burrito-style” wrap. Both the rice and bean mixture are thick enough that you won’t have to worry about a mess when eating. I used a collard green for my wrap, but feel free to use other large-leaf greens. Romaine Lettuce has a lighter flavor, while kale and collard greens have a much stronger green/earthy flavor….

Ultra Creamy Coconut Oatmeal w/ Banana & Goji Berries

Toujis Ultra Creamy Coconut Banana Chia Seed Oatmeal w/ Goji BerriesMy go-to breakfast is oatmeal — in all of its incarnations. This version is richer than my typical oatmeal as a result of canned full-fat coconut milk. I usually use unsweetened coconut milk, but this was a real treat on a chilly, rainy morning….

Savory Roasted Butternut Squash & Yogurt

Toujis Roasted Butternut Squash Yogurt w/ Pumpkin & Sunflower SeedsThis is a great breakfast or snack when I’m on-the-go and want something warming and hearty. I sometimes throw some fresh chopped beets in to roast with the squash and love that combination as well….

Tomato Zucchini Butter Bean Stew

Toujis Zucchini Zucchini Butter Bean Summer Soup StewLove this summer stew. It’s somehow savory and rich, while also fresh and light. I’ve often mixed fresh kale/collards/chard leaves the last 5 minutes of cooking, just to add a bit of that fresh ‘green’ flavor I love so much… and to increase the iron and calcium in the dish….

Savory Baked Egg, Mushrooms, & Yogurt

Toujis Savory Baked Poached Egg, Mushrooms, Arugula & YogurtThis dish is a real treat for me….totally unique in flavor and texture from the dishes I typically make. Creamy, savory, slightly spiced, with a heavenly aroma of mushrooms and garlic….

Perfect Vegetarian Jumbalaya

Toujis Vegetarian Jumbalaya / Rich Minestrone SoupI love this. Rich, hearty, and it’s super easy to make with lots of different ingredients you may have on hand. I’ve made this jumbalaya many different ways — fresh green beans, parsnip, daikon radish, spinach, parsley, experiment with your veggies and find different combinations you love.  The below ingredient list is a great base and guaranteed to taste amazing. Also note that you can use canned beans for a quicker dish, but I prefer to use a mixture of dried beans, soaked overnight and cooked longer with the other ingredients. The longer process creates that more saturated, slightly spiced “jumbalaya” flavor….

Quinoa Veggie Bowl w/ Butternut Squash, Mushrooms & Peas

Toujis Quinoa Veggie Bowl w/ Butternut Squash, Leeks, Mushrooms, Peas & FetaToday’s quinoa bowl is made with the veggies I had on hand. Delicious, convenient, and a satisfying way to get a balanced meal rich in minerals, nutrients, and protein. Remember, play around with the vegetables you have handy and experiment to find which combinations you like most–try carrots, onion, daikon radish, red radish, basil, arugula, beets…they are all delicious options….
